Grilled Shrimp Scampi

MARINADE
Combine to the following ingredients in a non-reactive bowl (glass, plastic, stainless). Stir until smooth and consistent:
- 1/2 cup dry white wine
- 1/2 cup extra virgin olive oil
- - juice lemon (one whole)
4 - cloves garlic (grated)
2 - tablespoons parsley (fresh or 1 TBS dried)
- 1/2 teaspoon red pepper flakes
- 1/4 teaspoon paprika
1 - teaspoon pepper (fresh ground)
- - - Salt (to taste)
Add and marinate for 1 hour:
SEAFOOD
2 - pounds Shrimp (large, shelled and deveined)
Grilling Instructions:
A) Start grill and bring grate to medium hot to hot temperature.
B) Skewer shrimp
C) Cook shrimp for a maximum of 2 minutes per side or until they become pink. (Do not overcook!)
D) Remove and eat at once.
Southwestern Variation: For a nice fajita marinade, substitute these ingredients:
- Use Tequila instead of white wine
- Use lime juice instead of lemon juice
- Use cilantro instead of parsley
- This marinade is also very tasty with boneless skinless chicken breasts
Serving suggestion: Serve with Roasted onions and green peppers, and with steamed brocolli.
